Ingredients

  • Gluten-free nonstick cooking spray
  • Salt
  • 2 cups gluten-free elbow pasta
  • 2 tablespoons unsalted butter
  • 2 tablespoons white rice flour
  • 1 cup whole milk
  • 8 ounces (2 cups) grated sharp cheddar cheese
  • 1 large egg, beaten
  • 2 tablespoons gluten-free breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons melted unsalted butter

Directions

Preheat oven to 425° F. Grease 12 standard muffin cups with nonstick cooking spray. Set aside.

Bring a large pot of water to a boil. Salt generously. Cook pasta according to package instructions. Drain well.

While the pasta cooks, prepare the sauce. Melt butter in a large saucepan over medium heat. Add rice flour. Cook, whisking constantly, until lightly brown, about 1 minute. Slowly add milk in a slow and steady stream. Bring to a boil. Cook until thick, about two minutes. Reduce heat to low. Add cheese, one handful at a time, stirring gently. Allow cheese to melt between each addition. Remove from heat. Add drained pasta. Stir to combine. Add egg. Stir until combined.

Spoon mac and cheese into prepared muffin cups. In a small bowl, stir together bread crumbs, Parmesan cheese and melted butter. Divide evenly over each muffin cup.

Bake until golden brown, about 20 minutes.

Store leftovers wrapped in the refrigerator for up to three days. Reheat, covered, on low power in the microwave or place the mac and cheese cups in a small baking pan. Add one tablespoon water to the pan. Cover the pan tightly with foil. Heat in a preheated 350° F oven until warm, about 15 minutes.

Yeah, it’s been one of THOSE WEEKS.
I don’t know if it was the atmospheric pressure, the humidity or I just wasn’t holding my mouth right (this is ALWAYS my brother’s reason for something not working the first time!).

I had three GREAT (I knew thought) recipes I was working on and EVERY. SINGLE. ONE failed to meet my standards for the blog.
One tasted fantastic, but fell in the middle!! The next one looked like a glob, but tasted really good and the chocolate one looked ok, but was as chewy as a rubber ball!! Urggghhh!

I refuse to give up on creating but at this point I need some help HELP!

In a word, nothing.

So let’s go with mac and cheese with all that cheesy flavor, stringy warm deliciousness and the soft, soothing texture…win-win-WIN!

Even though my emotions are telling me I want a big ole bowl right now, some things are just better if you have to wait on them. And this is one of those dishes.

Although it is a slow cooker recipe, it will be ready in less than four hours, so a perfect lunch time dish on the weekend (or week day). I’m thinking perfect dish for the kids in the summertime for lunch.

I love switching up the basic flavor. Sometimes I make it using cheddar cheese or gouda or even pepper jack cheese to stimulate the tastebuds and conversation: ‘Man, are you sure this is mac and cheese?’ ‘ or ‘Wow, a little spicy tonight huh?’ ‘Man, what is this flavor, it tastes a little strong, but I LIKE it! Way to go mom!’ Thank you, thank you very much; just a little something I whipped up for my loved ones.

Yeah, now that I’ve eaten a bowlful some of this fantastic gluten free mac and cheese, I will head back to my mixing bowls, cake pans, oven and let the magic begin (again!).

  • ¼ cup melted butter, cooled
  • 3 eggs
  • ½ tsp salt
  • 8 oz gluten free macaroni
  • 3 cups shredded cheddar cheese

  2. Pour into a greased slow cooker.
  3. Add cheese and macaroni to slow cooker.
